easy gumbo

This is my version of Gumbo. Simple & easy, but delicious. Even easier if you use a rotisserie chicken from your supermarket. I hope you enjoy.

Ingredients

  • 1 package keilbalsa smoked sausage
  • 2 cups cooked & shredded chicken
  • 2 cups large frozen shrimp, thawed
  • 1 - onion, chopped
  • 1 package frozen cut okra
  • 1 can ro tel tomatoes
  • 1 can stewed tomatoes
  • 4 cans chicken broth
  • 2 cups minute rice
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoons minced garlic

How To Make easy gumbo

  • Step 1
    Cut sausage into 1/4 inch pieces. Place sausage & onion in soup pot with a little oil & stir fry a few minutes until sausage is browned & onions are tender.
  • Step 2
    Add chicken broth & rice to pot. Bring to a boil for about 10 minutes.
  • Step 3
    Add tomatoes, okra, chicken, cayenne pepper & garlic. Mix together well. Simmer for about 10-15 minutes. Add more garlic or cayenne if you want more. Also, add more chicken broth if you want it more soupy.
  • Step 4
    Stir in thawed shrimp. Let simmer 5-10 minutes. NOTE: I use the precooked shrimp. If you cook shrimp too long, it will be rubbery. Taste even better as leftovers the next day. Yummy with cornbread, hushpuppies or hoe cakes.
