Lori Newton

This is my version of Gumbo. Simple & easy, but delicious. Even easier if you use a rotisserie chicken from your supermarket. I hope you enjoy.

    keilbalsa smoked sausage
  • 2 c
    cooked & shredded chicken
  • 2 c
    large frozen shrimp, thawed
  • 1
    onion, chopped

    ro tel tomatoes
  • 1 can(s)
    stewed tomatoes
  • 4 can(s)
    chicken broth
  • 2 c
    minute rice
  • 1/2 tsp
    cayenne pepper
  • 2 tsp
    minced garlic

How to Make EASY GUMBO

  1. Cut sausage into 1/4 inch pieces. Place sausage & onion in soup pot with a little oil & stir fry a few minutes until sausage is browned & onions are tender.
  2. Add chicken broth & rice to pot. Bring to a boil for about 10 minutes.
  3. Add tomatoes, okra, chicken, cayenne pepper & garlic. Mix together well. Simmer for about 10-15 minutes. Add more garlic or cayenne if you want more. Also, add more chicken broth if you want it more soupy.
  4. Stir in thawed shrimp. Let simmer 5-10 minutes. NOTE: I use the precooked shrimp. If you cook shrimp too long, it will be rubbery.
Taste even better as leftovers the next day. Yummy with cornbread, hushpuppies or hoe cakes.
