easy gumbo
This is my version of Gumbo. Simple & easy, but delicious. Even easier if you use a rotisserie chicken from your supermarket. I hope you enjoy.

Ingredients
- 1 package keilbalsa smoked sausage
- 2 cups cooked & shredded chicken
- 2 cups large frozen shrimp, thawed
- 1 - onion, chopped
- 1 package frozen cut okra
- 1 can ro tel tomatoes
- 1 can stewed tomatoes
- 4 cans chicken broth
- 2 cups minute rice
- 1/2 teaspoon cayenne pepper
- 2 teaspoons minced garlic
How To Make easy gumbo

Step 1Cut sausage into 1/4 inch pieces. Place sausage & onion in soup pot with a little oil & stir fry a few minutes until sausage is browned & onions are tender.

Step 2Add chicken broth & rice to pot. Bring to a boil for about 10 minutes.

Step 3Add tomatoes, okra, chicken, cayenne pepper & garlic. Mix together well. Simmer for about 10-15 minutes. Add more garlic or cayenne if you want more. Also, add more chicken broth if you want it more soupy.

Step 4Stir in thawed shrimp. Let simmer 5-10 minutes. NOTE: I use the precooked shrimp. If you cook shrimp too long, it will be rubbery. Taste even better as leftovers the next day. Yummy with cornbread, hushpuppies or hoe cakes.
