Ingredients For easy gazpacho

  • 1 lg
    tomato, chopped
  • 1 md
    cucumber, peeled and chopped
  • 1 md
    onion, chopped
  • 1 lg
    roasted red bell pepper from a jar
  • 2 clove
    garlic
  • 1/2 c
    fresh cilantro
  • 0
    salt and pepper
  • 3 c
    V8 juice
  • 2 Tbsp
    red wine vinegar
  • 0
    hot sauce, if desired

How To Make easy gazpacho

  • 1
    Place all ingredients in a blender and blend it up.

    Place in refrigerator for at least 4 hours or up to 2 days.
  • 3
    Can garnish with chopped pieces of vegetables you desire.
