easy cabbage potato soup

I love potatoes. Unfortunately, they are too high in potassium for kidney disease patients. This is my adaptation using only one potato and substituting cauliflower for one potato. It is also low in salt. Double-boiling potatoes is a way of reducing potassium. Drain the water from the potatoes both times. Do not use the potato water in the soup. If you are not a kidney patient you can cook the potatoes along with the other vegetables. This soup is tasty for anyone. If you don't eat dairy, you can substitute 1 cup of oat cream for the evaporated milk and reduce water by 1/2 cup.

Ingredients

  • 1 large potato, peeled and cubed
  • 1 cup chopped onion
  • 3 cups coleslaw mix
  • 1/2 cup chopped cauliflower
  • 4 cups water
  • 3 teaspoons chicken flavoring (paste, cubes or powder)
  • 1/8 teaspoon ground pepper
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup evaporated milk

How To Make easy cabbage potato soup

  • Step 1
    Double-boil the potato by putting the cubed potato into cold water and bringing it up to a boil for 5 minutes. Pour off the water. Cover again with water and bring to a boil for 10 minutes. Pour off the water. Set aside the potatoes in a separate bowl.
  • Step 2
    In the same cooking pot, put the rest of the ingredients except for the evaporated milk. Bring to a boil and simmer for half an hour or as long as it takes to tenderize them.
  • Step 3
    When vegetables are tender, add the potato back into the pot and bring back to a simmer to fully cook the potatoes; about 5 minutes.
  • Step 4
    Add the evaporated milk, reheat, and taste for seasoning. If you are not a kidney patient, you can skip step one and add the potato in step two.
  • Step 5
    Note: Another option is to use 18% cream or Creamo. Same as for oat cream - use 1 cup cream and reduce water by 1/2 cup.
