This soup is fantastic! It's a hearty soup, full of delicious ingredients and so, so easy to make!

Ingredients

  • 1 pound ground beef, chicken or turkey
  • 1 large onion, chopped fine
  • 1 pound velveeta cheese, cut into cubes
  • 1 can 15-ounce size whole kernel corn (i used about 1 1/2 cups frozen corn)
  • 1 can 15-ounce size black beans, undrained
  • 1 can 10-ounce size rotel tomatoes
  • 1 can 14.5-ounce size petite diced tomatoes
  • 1 package taco seasoning mix
  • 2 cups beef broth

How To Make easy and delicious mexican cheese soup

  • Step 1
    Brown ground beef and onion in a skillet. Drain and add to dutch oven. Add cheese and remaining ingredients and stir well.
  • Step 2
    Cook on low to medium heat for about 10 minutes or until heated through and cheese is melted.
  • Step 3
    Serve with crusty bread, tortilla chips or cornbread.
