Ingredients
- 1 pound ground beef, chicken or turkey
- 1 large onion, chopped fine
- 1 pound velveeta cheese, cut into cubes
- 1 can 15-ounce size whole kernel corn (i used about 1 1/2 cups frozen corn)
- 1 can 15-ounce size black beans, undrained
- 1 can 10-ounce size rotel tomatoes
- 1 can 14.5-ounce size petite diced tomatoes
- 1 package taco seasoning mix
- 2 cups beef broth
How To Make easy and delicious mexican cheese soup

Step 1Brown ground beef and onion in a skillet. Drain and add to dutch oven. Add cheese and remaining ingredients and stir well.

Step 2Cook on low to medium heat for about 10 minutes or until heated through and cheese is melted.

Step 3Serve with crusty bread, tortilla chips or cornbread.
