Ingredients

  • 2 large
    red rose potatoes skin on diced
  • 1 large
    onion, small diced
  • 1 tsp
    ham base
  • 1/2 c
    milk
  • 2 c
    water
  • 1 can(s)
    campbell's condensed pepper jack soup
  • 1 can(s)
    campbell's condensed cream of celery soup
  • 2 c
    cubed ham
  • ·
    fresh cracked black pepper to taste
  • 1/2 c
    sour cream

How to Make Diabetic Crock Pot Ham & Potato Soup

Step-by-Step

  1. Put all ingredients, except sour cream, in crock pot in morning and mix well. If it looks like you need a little more liquid, add a little more milk.
  2. Turn the crock pot on low and forget about it until suppertime.
  3. 15 minutes before serving, while still in crock pot, stir in half a cup of sour cream.
