Ingredients
- 3 large pieces of kombu wiped with a damp paper towel
- 2 quarts water
- 3 cups bonito flakes
How To Make dashi stock

Step 1Place the kombu in the water in a large stock pot. Let sit 6 hours or overnight. Place on stove and bring to a boil. Reduce the heat to simmer and remove the kombu

Step 2Gently add the bonito flakes and let simmer 10 minutes. Strain through fine mesh strainer. Discard the flakes.
