Ingredients
- MARINADE
- 1 tablespoon mirin
- 4 tablespoons dark soy sauce
- 2 tuna steaks about 4 oz each
- NOODLES
- 6 ounces rice noodles cooked according to package directions.
- BROTH
- 6 cups water
- 1/4 ounce dashi stock powder
- 2 tablespoons mirin
- 4 tablespoons dark soy sauce
- VEGGIES
- 1 tablespoon olive oil
- 4 cloves garlic minced
- 1 large carrot thinly sliced
- 4 scallions sliced into 1 inch lengths
- 1 cup napa cabbage shredded
- 1 cup spinach leaves
How To Make dashi noodle soup with tuna

Step 1Mix the marinade ingredients together and add the tuna steaks and brush the marinade all over them. Set aside for 1 hour. After an hour slice the tuna steak intl 1/4 inch pieces set aside.

Step 2Cook noodles and drain. Set aside.

Step 3Place the water, dashi stock, mirin and soy sauce together and simmer over med. heat.

Step 4Add oil to a wok. Stir fry the garlic, carrots, scallions and cabbage for 2 minutes. Stir in the spinach

Step 5To assemble place noodles in the bottom of a bowl. Top with half the veggie mixture. Place the sliced raw tuna on top.

Step 6Pour the hot broth over top. This will cook the tuna just enough to be rare but warm.
