I have seen various soup recipes using smoked sausage and potatoes. I combined ingredients from a few to come up with this one. You can add or subtract any ingredients according to your taste.

prep time 30 Min
cook time 5 Hr
method ---
yield 4-6 serving(s)

Ingredients

  • 12 oz packages hillshire farms beef lil smokies, halved
  • 6-8 small red potatoes quartered,
  • 2 tablespoons minced garlic
  • 2 - ribs celery, sliced
  • 1 package dry onion soup mix
  • 1 can condensed cream of mushroom soup
  • 1 medium red bell pepper, seeded and diced
  • 1 can 14.5 ounces; diced tomatoes, undrained
  • 1 can 15.25 ounces corn, drained
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

How To Make crock-pot sausage and potato soup

  • Step 1
Place cut sausage, potatoes and vegetables into crock pot.
  • Step 2
Combine chicken broth, dry onion soup mix, and cream of mushroom soup. Mix well to combine all ingredients.(What I did was stir together the mushroom and dry onion soup using just about 1/2 of the chicken broth to dissolve the dry soup base and thin out the mushroom soup and then added the remaining chicken broth) Pour over vegetables and sausage in crock pot.
  • Step 3
Cook on Low for 6-8 hours or High for 3-4 hours. **OPTIONAL: approx 5 minutes before serving you may stir in 1/2 cup sour cream.
