crock-pot sausage and potato soup

I have seen various soup recipes using smoked sausage and potatoes. I combined ingredients from a few to come up with this one. You can add or subtract any ingredients according to your taste.

Ingredients
- 12 oz packages hillshire farms beef lil smokies, halved
- 6-8 small red potatoes quartered,
- 2 tablespoons minced garlic
- 2 - ribs celery, sliced
- 1 package dry onion soup mix
- 1 can condensed cream of mushroom soup
- 1 medium red bell pepper, seeded and diced
- 1 can 14.5 ounces; diced tomatoes, undrained
- 1 can 15.25 ounces corn, drained
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
How To Make crock-pot sausage and potato soup

Step 1Place cut sausage, potatoes and vegetables into crock pot.

Step 2Combine chicken broth, dry onion soup mix, and cream of mushroom soup. Mix well to combine all ingredients.(What I did was stir together the mushroom and dry onion soup using just about 1/2 of the chicken broth to dissolve the dry soup base and thin out the mushroom soup and then added the remaining chicken broth) Pour over vegetables and sausage in crock pot.

Step 3Cook on Low for 6-8 hours or High for 3-4 hours. **OPTIONAL: approx 5 minutes before serving you may stir in 1/2 cup sour cream.
