I have seen various soup recipes using smoked sausage and potatoes. I combined ingredients from a few to come up with this one. You can add or subtract any ingredients according to your taste.

12 oz pkg
hillshire farms beef lil smokies, halved
6-8 small
red potatoes quartered,
2 Tbsp
minced garlic
ribs celery, sliced
1 pkg
dry onion soup mix
1 can(s)
condensed cream of mushroom soup
1 medium
red bell pepper, seeded and diced
1 can(s)
14.5 ounces; diced tomatoes, undrained
1 can(s)
15.25 ounces corn, drained
4 c
chicken broth
1 tsp
dried thyme
1 tsp
1 tsp
freshly ground black pepper

How to Make Crock-Pot Sausage and Potato Soup


  • 1Place cut sausage, potatoes and vegetables into crock pot.
  • 2Combine chicken broth, dry onion soup mix, and cream of mushroom soup. Mix well to combine all ingredients.(What I did was stir together the mushroom and dry onion soup using just about 1/2 of the chicken broth to dissolve the dry soup base and thin out the mushroom soup and then added the remaining chicken broth)
    Pour over vegetables and sausage in crock pot.
  • 3Cook on Low for 6-8 hours or High for 3-4 hours.

    **OPTIONAL: approx 5 minutes before serving you may stir in 1/2 cup sour cream.
