    olive oil
  • 2
    garlic cloves, finely chopped
  • 1 large
    onion, chopped
  • 5 c
    chicken broth
  • 4 medium
    tomatoes, chopped
  • 2 c
    corn, fresh
  • 1 Tbsp
    chiles, canned and mild
  • 4 medium
    zucchini, thinly sliced
  • 1/2 c
    basil, fresh chopped

How to Make Corn, Tomato & Summer Squash Soup


  1. In a large deep pot, heat oil; add garlic and onion; saute until softened.
  2. Add chicken broth, tomatoes, corn and chile and simmer for 15 minutes.
  3. Add zucchini and basil; simmer for 5 minutes longer.
  4. Serve hot, passing garnishes of sour cream and cilantro, if desired.
