corn, tomato & summer squash soup

Ingredients

  • 1 tablespoon olive oil
  • 2 - garlic cloves, finely chopped
  • 1 large onion, chopped
  • 5 cups chicken broth
  • 4 medium tomatoes, chopped
  • 2 cups corn, fresh
  • 1 tablespoon chiles, canned and mild
  • 4 medium zucchini, thinly sliced
  • 1/2 cup basil, fresh chopped

How To Make corn, tomato & summer squash soup

  • Step 1
    In a large deep pot, heat oil; add garlic and onion; saute until softened.
  • Step 2
    Add chicken broth, tomatoes, corn and chile and simmer for 15 minutes.
  • Step 3
    Add zucchini and basil; simmer for 5 minutes longer.
  • Step 4
    Serve hot, passing garnishes of sour cream and cilantro, if desired.
