1 Tbspolive oil
2garlic cloves, finely chopped
1 largeonion, chopped
5 cchicken broth
4 mediumtomatoes, chopped
2 ccorn, fresh
1 Tbspchiles, canned and mild
4 mediumzucchini, thinly sliced
1/2 cbasil, fresh chopped
How to Make Corn, Tomato & Summer Squash Soup
- In a large deep pot, heat oil; add garlic and onion; saute until softened.
- Add chicken broth, tomatoes, corn and chile and simmer for 15 minutes.
- Add zucchini and basil; simmer for 5 minutes longer.
- Serve hot, passing garnishes of sour cream and cilantro, if desired.
