- 1 tablespoon olive oil
- 2 - garlic cloves, finely chopped
- 1 large onion, chopped
- 5 cups chicken broth
- 4 medium tomatoes, chopped
- 2 cups corn, fresh
- 1 tablespoon chiles, canned and mild
- 4 medium zucchini, thinly sliced
- 1/2 cup basil, fresh chopped
How To Make corn, tomato & summer squash soup

Step 1In a large deep pot, heat oil; add garlic and onion; saute until softened.

Step 2Add chicken broth, tomatoes, corn and chile and simmer for 15 minutes.

Step 3Add zucchini and basil; simmer for 5 minutes longer.

Step 4Serve hot, passing garnishes of sour cream and cilantro, if desired.
