This could be a light lunch, or you can add items to it. I added Kimchi for a spicy lunch, then some ramen for another lunch.

Ingredients

  • 4 ounces dried shiitake mushrooms
  • 6 cups chicken stock
  • 4 cups clam juice
  • 2 medium shallots, chopped
  • 1 tablespoon soy sauce
  • 4 cloves garlic, minced
  • 1 lemon, zested

How To Make consommé with mushrooms

  • Step 1
    Place the dried mushrooms in a bowl. Boil water and pour it over the mushrooms, making sure they are covered. Let it sit for 20 minutes.
  • Step 2
    Strain and reserve one cup of the liquid.
  • Step 3
    Combine the chicken stock, clam juices, shallots, garlic, soy sauce, and reserved mushroom liquid. Simmer for 20 minutes.
  • Step 4
    Strain the consommé, reserving the mushrooms.
  • Step 5
    Ladle the consommé into bowls, and add some zest of the lemon. Then add the mushrooms back in.
