Ingredients
- 4 ounces dried shiitake mushrooms
- 6 cups chicken stock
- 4 cups clam juice
- 2 medium shallots, chopped
- 1 tablespoon soy sauce
- 4 cloves garlic, minced
- 1 lemon, zested
How To Make consommé with mushrooms

Step 1Place the dried mushrooms in a bowl. Boil water and pour it over the mushrooms, making sure they are covered. Let it sit for 20 minutes.

Step 2Strain and reserve one cup of the liquid.

Step 3Combine the chicken stock, clam juices, shallots, garlic, soy sauce, and reserved mushroom liquid. Simmer for 20 minutes.

Step 4Strain the consommé, reserving the mushrooms.

Step 5Ladle the consommé into bowls, and add some zest of the lemon. Then add the mushrooms back in.
