connie's potato soup
My ex-sister-in-law gave me this recipe over four decades ago. It's quite versital. Sometimes I'll add more potato or onions and less water. Can easily be doubled. Tweak it to your tastes. Like most great soups, it's better the second day. Enjoy!

Ingredients
- 3 tablespoons butter
- 1 cup diced onions
- 3 cups cubed potatoes
- 1 - carrot- grated
- 2 cups water
- - small amount of flour and water mixture
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 3 cups milk
- 3 tablespoons parsley flakes
- 1/2 cup sour cream (optional
How To Make connie's potato soup

Step 1Gather ingredients.

Step 2Peel and dice potatoes and immediately put into cold water.

Step 3Melt butter in pan.

Step 4Brown onions.

Step 5Add butter, onions,carrots, water, salt & pepper to potatoes.

Step 6Cook over low heat for 20 minutes until potatoes are cook through.

Step 7Mix together a small amount of flour and water. Add this slurry to potatoes.

Step 8Stir in milk and parsley and bring to the boiling point. Turn off heat.

Step 9Option step: Garnish with sour cream.
