My ex-sister-in-law gave me this recipe over four decades ago. It's quite versital. Sometimes I'll add more potato or onions and less water. Can easily be doubled. Tweak it to your tastes. Like most great soups, it's better the second day. Enjoy!

Ingredients For connie's potato soup

  • 3 Tbsp
    butter
  • 1 c
    diced onions
  • 3 c
    cubed potatoes
  • 1
    carrot- grated
  • 2 c
    water
  • small amount of flour and water mixture
  • 2 tsp
    salt
  • 1/2 tsp
    pepper
  • 3 c
    milk
  • 3 Tbsp
    parsley flakes
  • 1/2 c
    sour cream (optional

How To Make connie's potato soup

    Gather ingredients.
  • 2
    Peel and dice potatoes and immediately put into cold water.

    Melt butter in pan.
  • 4
    Brown onions.
  • 5
    Add butter, onions,carrots, water, salt & pepper to potatoes.

    Cook over low heat for 20 minutes until potatoes are cook through.

    Mix together a small amount of flour and water. Add this slurry to potatoes.

    Stir in milk and parsley and bring to the boiling point. Turn off heat.

    Option step: Garnish with sour cream.
