My husband loves sausage so revamped a recipe I saw. It's really filling but not heavy at the same time. Really warms you up on a cold night! Enjoy!

Ingredients For ciao bella sausage soup

  • 1 1/2 lb
    sweet italian sausage, removed from casing
  • 1/2 c
    dry white wine
  • 6 c
    water
  • 28 oz
    can diced tomatoes, with juices
  • 1 can
    (18.5 oz) progresso vegetable classics french onion soup
  • 1/2 tsp
    basil, dried
  • 1/2 tsp
    fennel seed, crushed
  • 1/4 tsp
    pepper
  • 3
    beef bouillon, cubes
  • 1 Tbsp
    worcestershire sauce
  • 1
    bay leaf
  • 1/3 c
    orzo pasta
  • 4 c
    fresh baby spinach, roughly chopped

How To Make ciao bella sausage soup

    Brown sausage in a dutch oven or large pot on medium heat. Break up sausage as it's cooking. Drain excess fat. Return sausage to the pot. Add white wine and allow to reduce for 3-5 minutes.

    Add water, tomatoes, soup, basil, fennel, pepper, bouillon, worcestershire sauce and bay leaf on high. Allow to come to a boil then reduce to low and simmer for 30-40 minutes.

    Add orzo pasta simmer for 15 minutes until pasta is done. Add spinach just until wilted.

    Discard bay leaf and serve. Goes great with focaccia bread I posted a recipe for.
