  • 2 Tbsp
  • 3 medium
    yukon gold potatoes, peeled, cubed 1/2 inch
  • 1 large
    leek, cleaned, trimmed, sliced 1/8 inch
  • 2 medium
    carrots, peeled, sliced
  • 1 tsp
    finely chopped fresh garlic
  • 12 oz
    ham, cubed 1/2 inch
  • 1
    (48 oz) carton chicken broth
  • 1/2 tsp
    thyme, leaves dried
  • 1/4 tsp
  • 1/8 tsp
  • 1/3 c
    fresh chopped parsley

How to Make Chunky Potato Ham Soup


  1. melt butter in 10 inch skillet until sizzling, add potatoes, leeks, carrots and garlic. cook over medium high heat just until leeks are tender (5-7 minutes).
  2. place vegetables and all remaining ingredients except parsley in slow cooker. cook on low for 4-6 hours or high for 2-4 hours, or until potatoes are tender. just before serving, stir in parsley.
