3 mdyukon gold potatoes, peeled, cubed 1/2 inch

1 lgleek, cleaned, trimmed, sliced 1/8 inch

2 mdcarrots, peeled, sliced

1 tspfinely chopped fresh garlic

12 ozham, cubed 1/2 inch

1(48 oz) carton chicken broth
-
1/2 tspthyme, leaves dried

1/4 tspsalt

1/8 tsppepper

1/3 cfresh chopped parsley
How To Make chunky potato ham soup

1melt butter in 10 inch skillet until sizzling, add potatoes, leeks, carrots and garlic. cook over medium high heat just until leeks are tender (5-7 minutes).

2place vegetables and all remaining ingredients except parsley in slow cooker. cook on low for 4-6 hours or high for 2-4 hours, or until potatoes are tender. just before serving, stir in parsley.
