Ingredients
- 5 to 6 - potatoes, peeled and chopped
- 1 tablespoon butter
- 1 small onion, chopped finely
- 1 cup chicken stock (homemade if you'd like)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 ounces cheese, shredded
- 1 teaspoon heaping rosemary chopped, fresh
- - bacon as garnish (optional)
How To Make chunky potato cheddar soup

Step 1Melt the butter in a heavy saucepan. Add the onion and cook on medium for 5 minutes.

Step 2Add the potatoes and the remaining ingredients. Let the soup simmer for 20-30 minutes.

Step 3Puree about half of the mixture, leaving some of the potatoes and onions intact.

Step 4Garnish with bacon, sprinkle with some cheddar cheese.
