this is a good soup for those cold days when you want something quick to make for supper

Ingredients

  • 5 to 6 - potatoes, peeled and chopped
  • 1 tablespoon butter
  • 1 small onion, chopped finely
  • 1 cup chicken stock (homemade if you'd like)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 ounces cheese, shredded
  • 1 teaspoon heaping rosemary chopped, fresh
  • - bacon as garnish (optional)

How To Make chunky potato cheddar soup

  • Step 1
    Melt the butter in a heavy saucepan. Add the onion and cook on medium for 5 minutes.
  • Step 2
    Add the potatoes and the remaining ingredients. Let the soup simmer for 20-30 minutes.
  • Step 3
    Puree about half of the mixture, leaving some of the potatoes and onions intact.
  • Step 4
    Garnish with bacon, sprinkle with some cheddar cheese.
