    2 cups potatoes, peeled and diced
  • ·
    1/2 cup carrots, peeled and diced
  • ·
    1/2 cup celery, chopped
  • ·
    1/4 cup onion, chopped
  • ·
    2 cups water
  • ·
    1 1/2 teapoon salt
  • ·
    1/4 teaspoon pepper
  • ·
    1 cup cooked ham, cubed
  • ·
    1/4 cup butter
  • ·
    1/4 cup all-purpose flour
  • ·
    2 cups milk
  • ·
    8 oz. pkg. shredded cheddar cheese

How to Make Christmas Eve Soup


  1. Combine veggies, water, salt and pepper in a large soup pot. Bring to a boil over medium heat. Reduce heat; cover and simmer until veggies are tender.
  2. Stir in ham; set aside.
  3. In a separate saucepan, melt butter; stir in flour until smooth. Gradually add milk; bring to a boil.
  4. Cook and stir for 2 minutes, until thickened. Stir in cheese until melted; add to veggie mixture and heat through.
