Ingredients
- 1 1/2 pounds boneless skinless chicken breast
- 4 cups unsalted chicken stock
- 1/2 pound hot smoky sausage (like andouille)
- 3 tablespoons olive oil
- 1/4 cup all purpose flour
- 1 cup sliced okra (frozen is okay)
- 1 medium onion. chopped
- 3 sticks celery. chopped
- 2 cloves garlic,minced or pressed
- 1 ounce 14 1/2 oz can whole tomatoes, undrained
- 1 cup spicy hot v8
- 1/2 cup sliced scallion
- 2 - bay leaves
- 2 teaspoons worcestershire sauce
- 3/4 teaspoon thyme
- 3/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon white pepper
- 1/4 teaspoon cayenne
- 3-5 dashes tabasco sauce or louisiana hot sauce (optional)
