  • 8 medium
    russet potatoes cut into small cubes
  • 2 Tbsp
  • 1 medium
    red onion diced
  • 5 clove
    garlic minced
  • 1/4 c
    dry white wine
  • 32 oz
    chicken stock
  • 2 c
    heavy cream
  • 1/4 c
  • 1 c
    sour cream
  • 1/4 c
    real mayonnaise
  • 1/4 c
  • 1 pkg
    ranch dressing mix
  • 2 c
    sharp cheddar cheese shredded
  • 1/2 c
    parmesan cheese grated
  • 10 slice
    bacon cooked and diced
  • 4
    green onions diced
  • ·
    fresh cracked black pepper

How to Make Cheesy Ranch Potato Soup with Bacon


  1. Place the butter in a large pot. Saute the onions for about 5 minutes. Add the garlic and saute one minute. Add the wine and let most evaporate. Stir in the chicken stock. Bring to a boil. Add the potatoes and cover pot and cook about 10 minutes until potatoes are tender.
  2. Stir the heavy cream and flour together and set aside. Mix the sour cream, mayonnaise, milk and ranch dressing together and set aside.
  3. Stir the heavy cream mixture into the pot. let cook until thickened. Add the cheddar and parmesan cheese. Let cook 5 minutes. Add the ranch and sour cream mixture. Cook until heated through.
  4. Stir in the bacon and green onions. Top with fresh cracked pepper when serving.
