Ingredients

  • 8 medium russet potatoes cut into small cubes
  • 2 tablespoons butter
  • 1 medium red onion diced
  • 5 cloves garlic minced
  • 1/4 cup dry white wine
  • 32 ounces chicken stock
  • 2 cups heavy cream
  • 1/4 cup flour
  • 1 cup sour cream
  • 1/4 cup real mayonnaise
  • 1/4 cup milk
  • 1 package ranch dressing mix
  • 2 cups sharp cheddar cheese shredded
  • 1/2 cup parmesan cheese grated
  • 10 slices bacon cooked and diced
  • 4 - green onions diced
  • - fresh cracked black pepper

How To Make cheesy ranch potato soup with bacon

  • Step 1
    Place the butter in a large pot. Saute the onions for about 5 minutes. Add the garlic and saute one minute. Add the wine and let most evaporate. Stir in the chicken stock. Bring to a boil. Add the potatoes and cover pot and cook about 10 minutes until potatoes are tender.
  • Step 2
    Stir the heavy cream and flour together and set aside. Mix the sour cream, mayonnaise, milk and ranch dressing together and set aside.
  • Step 3
    Stir the heavy cream mixture into the pot. let cook until thickened. Add the cheddar and parmesan cheese. Let cook 5 minutes. Add the ranch and sour cream mixture. Cook until heated through.
  • Step 4
    Stir in the bacon and green onions. Top with fresh cracked pepper when serving.
