Ingredients
- 8 medium russet potatoes cut into small cubes
- 2 tablespoons butter
- 1 medium red onion diced
- 5 cloves garlic minced
- 1/4 cup dry white wine
- 32 ounces chicken stock
- 2 cups heavy cream
- 1/4 cup flour
- 1 cup sour cream
- 1/4 cup real mayonnaise
- 1/4 cup milk
- 1 package ranch dressing mix
- 2 cups sharp cheddar cheese shredded
- 1/2 cup parmesan cheese grated
- 10 slices bacon cooked and diced
- 4 - green onions diced
- - fresh cracked black pepper
How To Make cheesy ranch potato soup with bacon

Step 1Place the butter in a large pot. Saute the onions for about 5 minutes. Add the garlic and saute one minute. Add the wine and let most evaporate. Stir in the chicken stock. Bring to a boil. Add the potatoes and cover pot and cook about 10 minutes until potatoes are tender.

Step 2Stir the heavy cream and flour together and set aside. Mix the sour cream, mayonnaise, milk and ranch dressing together and set aside.

Step 3Stir the heavy cream mixture into the pot. let cook until thickened. Add the cheddar and parmesan cheese. Let cook 5 minutes. Add the ranch and sour cream mixture. Cook until heated through.

Step 4Stir in the bacon and green onions. Top with fresh cracked pepper when serving.
