cheeseburger soup
This is a favorite at our school luncheons and was a great way to convince my son that he likes vegetables. It isn't a healthy dinner but good and hot way to fill our bellies while working on the farm in our cold winter months. (we just moved onto a farm in Upstate New York from Kansas)

Ingredients
- 1/2 pound ground beef
- 3/4 cup onion, chopped
- 3/4 cup carrot, shredded
- 3/4 cup celery, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 tablespoons butter, divided
- 3 cups chicken broth
- 4 cups potatoes, diced
- 1/4 cup flour
- 8 ounces velveeta
- 1 1/2 cups milk
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup sour cream
How To Make cheeseburger soup

Step 1In large pot brown and drain ground beef. set aside

Step 2In same pot saute onions, carrots, celery, basil, parsley, and 1 tablespoon butter for 10 minutes.

Step 3Add chicken broth, potatoes, and ground beef to pot. simmer 10 min.

Step 4Meanwhile in a small sauce pan melt remaining 3 tablespoons butter, add flour cook till bubbly then add to large pot. reduce burner to med low.

Step 5Add milk, Velveeta, salt and pepper.

Step 6Once Velveeta is melted add sour cream and enjoy
