carol's italian sausage minestrone

I love soup! I eat it everyday. I love anything Italian, so this combination is perfect. I top my bowl off with a little Parmesan cheese along with a little cayenne pepper, since I like a little kick. Plain is just as good. This really is easy, quick and tasty. Just the way I like it. I hope you do to!

Ingredients

  • 1 pound italian sausage
  • 1 medium onion, chopped
  • 1 can white beans, (15.5)
  • 1 can diced tomatoes, unsalted, undrained
  • 1 box beef broth (32 ounces)
  • 1/4 cup spinach, chopped, frozen
  • 1/2 cup okra, frozen
  • 1 cup mixed vegetables, frozen
  • 1/2-1 teaspoon pepper
  • 1/2 cup elbow macaroni

How To Make carol's italian sausage minestrone

  • Step 1
    In a large saucepan, crumble and cook sausage and onions over medium heat until sausage is brown. Drain sausage, if desired. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 15 to 20 minutes or until pasta is cooked.
