carol's italian sausage minestrone
I love soup! I eat it everyday. I love anything Italian, so this combination is perfect. I top my bowl off with a little Parmesan cheese along with a little cayenne pepper, since I like a little kick. Plain is just as good. This really is easy, quick and tasty. Just the way I like it. Ingredients
- 1 pound italian sausage
- 1 medium onion, chopped
- 1 can white beans, (15.5)
- 1 can diced tomatoes, unsalted, undrained
- 1 box beef broth (32 ounces)
- 1/4 cup spinach, chopped, frozen
- 1/2 cup okra, frozen
- 1 cup mixed vegetables, frozen
- 1/2-1 teaspoon pepper
- 1/2 cup elbow macaroni

Step 1In a large saucepan, crumble and cook sausage and onions over medium heat until sausage is brown. Drain sausage, if desired. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 15 to 20 minutes or until pasta is cooked.
