parmesan cheese, grated
1 3/4 c
heavy cream
2 c
milk
3 can(s)
chicken broth
5 clove
garlic, minced
1 bunch
fresh spinach, chopped
pinch
green onions
2 lb
andouille sausage, rounds
2 tsp
italian seasoning
2 Tbsp
butter
2 Tbsp
olive oil

How to Make Cajun Potato Soup

Step-by-Step

  • 1Heat butter and oil together in large pot on medium heat.
  • 2Cook onion and garlic until onions are translucent (5 minutes)
  • 3Put uncooked sausage slices in frying pan, fry until no longer pink.
  • 4Add sausage slices to the pot of onion and garlic, cook and stir (5 minutes)
  • 5Stir in potatoes; cook and stir (5 minutes)
  • 6Pour in chicken broth, milk, cream and Italian seasoning. (simmer 15 minutes)
  • 7Mix in spinach.
  • 8Remove from heat and top with parmesan cheese and green onion if desired.
