Ingredients
- 1/2 - onion, diced
- 6 - russet potatoes, peeled, cut
- 1/4 cup parmesan cheese, grated
- 1 3/4 cups heavy cream
- 2 cups milk
- 3 cans chicken broth
- 5 cloves garlic, minced
- 1 bunch fresh spinach, chopped
- pinch green onions
- 2 pounds andouille sausage, rounds
- 2 teaspoons italian seasoning
- 2 tablespoons butter
- 2 tablespoons olive oil
How To Make cajun potato soup

Step 1Heat butter and oil together in large pot on medium heat.

Step 2Cook onion and garlic until onions are translucent (5 minutes)

Step 3Put uncooked sausage slices in frying pan, fry until no longer pink.

Step 4Add sausage slices to the pot of onion and garlic, cook and stir (5 minutes)

Step 5Stir in potatoes; cook and stir (5 minutes)

Step 6Pour in chicken broth, milk, cream and Italian seasoning. (simmer 15 minutes)

Step 7Mix in spinach.

Step 8Remove from heat and top with parmesan cheese and green onion if desired.
