    onion, diced
  • 6
    russet potatoes, peeled, cut
  • 1/4 c
    parmesan cheese, grated
  • 1 3/4 c
    heavy cream
  • 2 c
  • 3 can(s)
    chicken broth
  • 5 clove
    garlic, minced
  • 1 bunch
    fresh spinach, chopped
  • pinch
    green onions
  • 2 lb
    andouille sausage, rounds
  • 2 tsp
    italian seasoning
  • 2 Tbsp
  • 2 Tbsp
    olive oil

How to Make Cajun Potato Soup


  1. Heat butter and oil together in large pot on medium heat.
  2. Cook onion and garlic until onions are translucent (5 minutes)
  3. Put uncooked sausage slices in frying pan, fry until no longer pink.
  4. Add sausage slices to the pot of onion and garlic, cook and stir (5 minutes)
  5. Stir in potatoes; cook and stir (5 minutes)
  6. Pour in chicken broth, milk, cream and Italian seasoning. (simmer 15 minutes)
  7. Mix in spinach.
  8. Remove from heat and top with parmesan cheese and green onion if desired.
