Ingredients For cajun potato soup

  • 1/2
    onion, diced
  • 6
    russet potatoes, peeled, cut
  • 1/4 c
    parmesan cheese, grated
  • 1 3/4 c
    heavy cream
  • 2 c
    milk
  • 3 can
    chicken broth
  • 5 clove
    garlic, minced
  • 1 bunch
    fresh spinach, chopped
  • pinch
    green onions
  • 2 lb
    andouille sausage, rounds
  • 2 tsp
    italian seasoning
  • 2 Tbsp
    butter
  • 2 Tbsp
    olive oil

How To Make cajun potato soup

  • 1
    Heat butter and oil together in large pot on medium heat.
  • 2
    Cook onion and garlic until onions are translucent (5 minutes)
  • 3
    Put uncooked sausage slices in frying pan, fry until no longer pink.

    Add sausage slices to the pot of onion and garlic, cook and stir (5 minutes)

    Stir in potatoes; cook and stir (5 minutes)
  • 6
    Pour in chicken broth, milk, cream and Italian seasoning. (simmer 15 minutes)

    Mix in spinach.

    Remove from heat and top with parmesan cheese and green onion if desired.
