Ingredients
- 1 pound kielbasa sausage cut into pieces
- 2 tablespoons olive oil
- 3 medium leeks peeled and diced and soaked to make sure all grit is out
- 2 medium carrots sliced
- 1 small head green cabbage cut into bite size pieces
- 6 cloves garlic minced
- 1 cup button mushrooms cut in half
- 8 cups chicken stock
- 1 pound red potatoes cut into bite size pieces
- 1 teaspoon each dried basil oregano and parsley
- 1 - bay leaf
- - salt to taste
How To Make cabbage sausage and potato soup

Step 1Add Kielbasa to a large pot. Cook until browned remove and set aside. Add olive oil to pan. Stir in leeks, and carrots. Let cook for 5 minutes. Add the cabbage and mushrooms and cook 5 more minutes. Add the garlic, stir then pour in the chicken stock.

Step 2Bring to a boil. Add the potatoes, seasonings and bay leaf. Reduce heat and simmer for 15 minutes. Taste and adjust for salt.
