Ingredients

  • 1 pound kielbasa sausage cut into pieces
  • 2 tablespoons olive oil
  • 3 medium leeks peeled and diced and soaked to make sure all grit is out
  • 2 medium carrots sliced
  • 1 small head green cabbage cut into bite size pieces
  • 6 cloves garlic minced
  • 1 cup button mushrooms cut in half
  • 8 cups chicken stock
  • 1 pound red potatoes cut into bite size pieces
  • 1 teaspoon each dried basil oregano and parsley
  • 1 - bay leaf
  • - salt to taste

How To Make cabbage sausage and potato soup

  • Step 1
    Add Kielbasa to a large pot. Cook until browned remove and set aside. Add olive oil to pan. Stir in leeks, and carrots. Let cook for 5 minutes. Add the cabbage and mushrooms and cook 5 more minutes. Add the garlic, stir then pour in the chicken stock.
  • Step 2
    Bring to a boil. Add the potatoes, seasonings and bay leaf. Reduce heat and simmer for 15 minutes. Taste and adjust for salt.
