Ingredients
- 3 cups broccoli, chopped
- 6 cups yams, peeled and chopped
- 6 cups chicken broth, defatted
- 2 - onions, chopped
- 4 - garlic cloves, minced
- 1 tablespoon olive oil
- 1 cup celery, tops only, chopped
- 1/4 teaspoon allspice, ground (optional)
- 2 cups watercress, chopped
- - "just a pinch" of pepper
How To Make broccoli garden soup

Step 1Simmer the yams, covered, in two cups chicken broth 10 minutes or until soft; puree in food mill or processor - Set aside.

Step 2In large pot with cover, saute the onions and garlic in oil until the onions are translucent and starting to brown; Add celery.

Step 3Saute a few minutes, add broccoli and remaining chicken broth; Simmer, covered, eight minutes or until tender-crisp.

Step 4Stir in puree; add seasonings.

Step 5Serve immediately or serve chilled - Top each portion with 1/4 cup chopped watercress.
