Ingredients

  • 3 cups broccoli, chopped
  • 6 cups yams, peeled and chopped
  • 6 cups chicken broth, defatted
  • 2 - onions, chopped
  • 4 - garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 cup celery, tops only, chopped
  • 1/4 teaspoon allspice, ground (optional)
  • 2 cups watercress, chopped
  • - "just a pinch" of pepper

How To Make broccoli garden soup

  • Step 1
    Simmer the yams, covered, in two cups chicken broth 10 minutes or until soft; puree in food mill or processor - Set aside.
  • Step 2
    In large pot with cover, saute the onions and garlic in oil until the onions are translucent and starting to brown; Add celery.
  • Step 3
    Saute a few minutes, add broccoli and remaining chicken broth; Simmer, covered, eight minutes or until tender-crisp.
  • Step 4
    Stir in puree; add seasonings.
  • Step 5
    Serve immediately or serve chilled - Top each portion with 1/4 cup chopped watercress.
