Ingredients
- 1 medium onion ( chopped)
- 1 medium green bell pepper (chopped)
- 5 - celery stalks (chopped)
- 2 cloves garlic (minced)
- 1 pound andouille sausage (sliced 1/4 in)
- 1 can 15 oz tomatoes (cut small)
- 2 cans black eyed peas (do not drain}
- 1 can whole kernel corn
- 1/2 small bag frozen okra
- 1 tablespoon olive oil or your favorite oil
- 1 cup rice (uncooked)
- 3 cups chicken stock

Step 1Saute onion, bell pepper,celery in oil for 3-4 minutes and sausage and garlic cook 3-4 minutes more add remaining ingredients and simmer on medium-low heat 45 minutes.
