black eyed pea & sausage gumbo

My husband is a picky eater and he loves this gumbo. I love it the flavor is great and lots of vegetables

Ingredients

  • 1 medium onion ( chopped)
  • 1 medium green bell pepper (chopped)
  • 5 - celery stalks (chopped)
  • 2 cloves garlic (minced)
  • 1 pound andouille sausage (sliced 1/4 in)
  • 1 can 15 oz tomatoes (cut small)
  • 2 cans black eyed peas (do not drain}
  • 1 can whole kernel corn
  • 1/2 small bag frozen okra
  • 1 tablespoon olive oil or your favorite oil
  • 1 cup rice (uncooked)
  • 3 cups chicken stock

How To Make black eyed pea & sausage gumbo

  • Step 1
    Saute onion, bell pepper,celery in oil for 3-4 minutes and sausage and garlic cook 3-4 minutes more add remaining ingredients and simmer on medium-low heat 45 minutes.
  • Step 2
    I like to serve with cornbread
