green bell pepper (chopped)
celery stalks (chopped)

garlic (minced)
1 lb
andouille sausage (sliced 1/4 in)
1 can(s)
15 oz tomatoes (cut small)
2 can(s)
black eyed peas (do not drain}
1 can(s)
whole kernel corn
1/2 small
bag frozen okra
1 Tbsp
olive oil or your favorite oil
1 c
rice (uncooked)
3 c
chicken stock

How to Make Black Eyed Pea & Sausage Gumbo


  • 1Saute onion, bell pepper,celery in oil for 3-4 minutes and sausage and garlic cook 3-4 minutes more add remaining ingredients and simmer on medium-low heat 45 minutes.
  • 2I like to serve with cornbread
