Ingredients

  • 1 bunch beets, peeled, halved and sliced
  • beet greens, washed and finely chopped
  • 3 celery stalks, diced
  • 1 tablespoon lemon juice
  • pinch salt
  • pinch pepper
  • 1 large onion, diced
  • 4 carrots, sliced
  • 1 tablespoon vinegar
  • 1 tablespoon horseradish
  • 1 can tomato soup

How To Make beet soup

  • Step 1
    Put vegetables in a large pot with water to cover; add remaining ingredients and mix thoroughly.
  • Step 2
    Simmer 2 - 2 1/2 hours, until beets and carrots are tender.
