This is a delicious cold soup that is great on a hot day.

Ingredients

  • 6 cups cubed watermelon
  • 2 - limes, zested and juiced
  • 4 tablespoons olive oil
  • 6 slices pickled ginger
  • 1 tablespoon picked juice from the ginger
  • - salt
  • 1 cup diced cucumber
  • 2 tablespoons fresh basil chopped

How To Make basil watermelon bisque

  • Step 1
    Place the watermelon, zest and juice of the lime, the pickled ginger and brine, and 2 Tbsp of olive oil. Blend until smooth.
  • Step 2
    Place in a bowl and refrigerate for 3 hours. Taste and season with salt.
  • Step 3
    Meanwhile, dice the cucumbers. Mix with the basil and the remaining olive oil. Season with salt.
  • Step 4
    Ladle the bisque into individual bowls and top with the cucumber mixture.
