Ingredients
- 6 cups cubed watermelon
- 2 - limes, zested and juiced
- 4 tablespoons olive oil
- 6 slices pickled ginger
- 1 tablespoon picked juice from the ginger
- - salt
- 1 cup diced cucumber
- 2 tablespoons fresh basil chopped
How To Make basil watermelon bisque

Step 1Place the watermelon, zest and juice of the lime, the pickled ginger and brine, and 2 Tbsp of olive oil. Blend until smooth.

Step 2Place in a bowl and refrigerate for 3 hours. Taste and season with salt.

Step 3Meanwhile, dice the cucumbers. Mix with the basil and the remaining olive oil. Season with salt.

Step 4Ladle the bisque into individual bowls and top with the cucumber mixture.
