- 1/2 cup onions, chopped
- 1/2 cup carrot, chopped
- 1/2 cup celery, thinly sliced
- 3 cups mushrooms, freshly sliced
- 4 cups water
- 1/2 cup barley
- 4 teaspoons vegetable broth, powder
- 5/8 teaspoon garlic powder

Step 1Put vegetables in a large soup pot with a little water and cook for 5 minutes stirring frequently.

Step 2Add remaining ingredients and bring to a boil.

Step 3Cover and reduce heat to low and simmer 1 hour.
