This is simply the result of my wanting soup and barbecue at the same time. Please let me know what you think of it and how you've tweaked it.

Ingredients

  • 2
    cubes beef bouillon
  • 1 1/4 c
    water
  • 1/4 tsp
    smokehouse pepper
  • 1/4 tsp
    onion powder
  • 1/4 tsp
    smoked paprika
  • 15 oz
    tomato sauce
  • 1/2 tsp
    vinegar
  • 1/4 tsp
    granulated garlic
  • 1 Tbsp
    dry minced onion
  • 1/2 c
    1/4" cubes of potato
  • 8 oz
    leftover bbq brisket, sausage, &/or chicken
  • 3/4 c
    ranch style beans or leftover pinto beans

How to Make Barbecue Soup

Step-by-Step

  1. Dissolve bouillon cubes in 1 c. boiling water. Stir in tomato sauce and vinegar. Use remaining water to rinse tomato sauce can, then add this water to the mixture.
  2. In a 1.5-quart crock pot, combine all ingredients EXCEPT beans.
    Cover and cook on low 6 - 8 hours.
  3. Before serving, stir beans into soup or place some in each bowl before ladling the soup into it; stir to combine.
  4. Consider adding 1/2 c. corn to soup or maybe topping with shredded cheddar cheese.
