We serve this soup as the meal very filling and taste just like a baked potato.

Ingredients

  • 4 large baked potatoes peeled and cut into bite size chunked
  • 4 slices bacon cut into small pieces
  • 1 1/2 tablespoons roasted garlic
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon pepper
  • 1/4 cup sour cream
  • 3 cups chicken stock (i use homemade)
  • 1 cup half and half or heavy cream
  • 1 cup shredded sharp cheddar cheese plus some for garnish
  • 1 teaspoon parsley for garnish
  • 1 large sweet onion chopped

How To Make baked potato soup

  • Step 1
    In a large soup pot cook bacon, rendering fat. Once cooked remove bacon from pan leaving fat.
  • Step 2
    Add onions and garlic cook until tender Stir in flour, salt, basil and pepper mix well
  • Step 3
    Gradually add chicken stock/broth. Bring to boil and stir for 2 or 3 minutes until it become thickened.
  • Step 4
    Add the potato that you cut up smaller first and mash it into the liquids (I used an immersion blender)
  • Step 5
    Then add the 1 cup cheese when it is melted add the cream and mix well.
  • Step 6
    Add the rest of the potatoes and heat through. Garnish with the bacon from earlier. the parsley and more cheese.
