Ingredients
- 4 large baked potatoes peeled and cut into bite size chunked
- 4 slices bacon cut into small pieces
- 1 1/2 tablespoons roasted garlic
- 3 tablespoons flour
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon pepper
- 1/4 cup sour cream
- 3 cups chicken stock (i use homemade)
- 1 cup half and half or heavy cream
- 1 cup shredded sharp cheddar cheese plus some for garnish
- 1 teaspoon parsley for garnish
- 1 large sweet onion chopped
How To Make baked potato soup

Step 1In a large soup pot cook bacon, rendering fat. Once cooked remove bacon from pan leaving fat.

Step 2Add onions and garlic cook until tender Stir in flour, salt, basil and pepper mix well

Step 3Gradually add chicken stock/broth. Bring to boil and stir for 2 or 3 minutes until it become thickened.

Step 4Add the potato that you cut up smaller first and mash it into the liquids (I used an immersion blender)

Step 5Then add the 1 cup cheese when it is melted add the cream and mix well.

Step 6Add the rest of the potatoes and heat through. Garnish with the bacon from earlier. the parsley and more cheese.
