We serve this soup as the meal very filling and taste just like a baked potato.

4 large
baked potatoes peeled and cut into bite size chunked
4 slice
bacon cut into small pieces
1 1/2 Tbsp
roasted garlic
3 Tbsp
1 tsp
1 tsp
dried basil
1/2 tsp
1/4 c
sour cream
3 c
chicken stock (i use homemade)
1 c
half and half or heavy cream
1 c
shredded sharp cheddar cheese plus some for garnish
1 tsp
parsley for garnish
1 large
sweet onion chopped

How to Make Baked Potato Soup


  • 1In a large soup pot cook bacon, rendering fat. Once cooked remove bacon from pan leaving fat.
  • 2Add onions and garlic cook until tender
    Stir in flour, salt, basil and pepper mix well
  • 3Gradually add chicken stock/broth. Bring to boil and stir for 2 or 3 minutes until it become thickened.
  • 4Add the potato that you cut up smaller first and mash it into the liquids (I used an immersion blender)
  • 5Then add the 1 cup cheese when it is melted add the cream and mix well.
  • 6Add the rest of the potatoes and heat through. Garnish with the bacon from earlier. the parsley and more cheese.
