Baked Potato Soup

Ingredients

4 largebaked potatoes peeled and cut into bite size chunked

4 slicebacon cut into small pieces

1 1/2 Tbsproasted garlic
-
3 Tbspflour
-
1 tspsalt
-
1 tspdried basil
-
1/2 tsppepper
-
1/4 csour cream
-
3 cchicken stock (i use homemade)
-
1 chalf and half or heavy cream
-
1 cshredded sharp cheddar cheese plus some for garnish
-
1 tspparsley for garnish
-
1 largesweet onion chopped
How to Make Baked Potato Soup
- In a large soup pot cook bacon, rendering fat. Once cooked remove bacon from pan leaving fat.
- Add onions and garlic cook until tender
Stir in flour, salt, basil and pepper mix well - Gradually add chicken stock/broth. Bring to boil and stir for 2 or 3 minutes until it become thickened.
- Add the potato that you cut up smaller first and mash it into the liquids (I used an immersion blender)
- Then add the 1 cup cheese when it is melted add the cream and mix well.
- Add the rest of the potatoes and heat through. Garnish with the bacon from earlier. the parsley and more cheese.
