Ingredients For avocado gazpacho

1cucumber, peeled, seeded and diced

"just a pinch" of white pepper

"just a pinch" of salt

2 Tbspvodka

1/2lemon, juice only

1avocado

1 cchicken stock

1 Tbspred wine vinegar

1 tspdill, fresh and chopped

1 Tbspdill, fresh and chopped

1 clettuce, torn

1green bell pepper, coarsely chopped

2garlic cloves, peeled cut into quarters

2shallots, quartered
How To Make avocado gazpacho

1Place the cucumber, garlic, shallots, green pepper, lettuce, 1 tablespoon dill, vinegar and chicken stock (in that order) in the container of a blender or food processor; Blend until smooth.

2Cut the avocado in half lengthwise; Peel and remove the pit.

3Roughly chop half the avocado and add it to the mixture in the blender or processor; Blend until smooth.

4Transfer to a medium bowl.

5Finely chop the remaining avocado and sprinkle with the lemon juice.

6Stir this into the gazpacho; add the vodka, salt and white pepper to taste.

7Stir gently and chill thoroughly before serving; Garnish with remaining chopped dill.
