mmmmmmmmm this soup is so good...though when I make it I always manage to get to many noodles in it and it's more like a casserole than a soup. lol

Ingredients

  • 1 pound pork steak, cut into 1/2 inch pieces
  • 2 cloves garlic, minced
  • 2 teaspoons ginger, ground
  • 2 - 14 1/2 ounces cans of chicken broth or 1 - 32 oz carton
  • 2 cups water
  • 2 tablespoons soy sauce
  • 2 cups fine egg noodles, uncooked
  • 1 medium carrot, sliced
  • 1 small red bell pepper, chopped
  • 2 cups fresh spinach, torn

How To Make asian pork and noodle soup

  • Step 1
    Spray a 3 quart pan with non stick spray, heat over medium high heat. Add pork, garlic and ginger. Cook and stir 3-5 minutes or until pork is brown. Stir in broth, water and soy sauce. Heat to boiling, reduce heat simmer uncovered 5 minutes. Stir in noodles, carrot and peppers. Simmer uncovered 10 minutes or until noodles are tender. Stir in spinach and cook until heated through and spinach is wilted.
