Apple Curry Lentil Soup
1 lbred lentils
1 1/2 tspsalt, divided between both jars
6 Tbspminced dried onions
2 Tbspcurry powder
1 tspgarlic powder
1 lbgreen lentils
1/2 pkgdried apple rings, cut into 1/2" pieces.
2 Tbspdried parsley leaves
How to Make Apple Curry Lentil Soup
- Makes 2 gift jars:
In the bottom of each glass jar, place 8oz red lentils; top with 1 1/2 tsp. salt, 3 T. dried onions, 1 T. curry powder, 1/2 tsp. garlic powder, 8oz.green lentils,1/2c.cut apples and 1 T. dried parsley. In that order. Seal jars and store at room temperature up to a month.
- Prepare labels with cooking instructions; attach to jars.
- Cooking Instructions;
Place lentil soup mix in a 3qt. saucepan with 7 cups of water. Heat to boiling on High. Reduce heat to low, cover and simmer 20-30 minutes. Stirring occasionally. Makes 8 cups of soup.
