Ingredients
- 2 pounds squid, cleaned and cut the body into rings and leave the tentacles intact
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 cup chopped white onion
- 4 ounces anchovies
- 1 bottle clam juice
- 1/2 cup water
- 1 - juice of 1 lemon
- - fresh parsley for garnish
How To Make anchovy squid soup

Step 1Add the oil to a pot. Add the onion, garlic, and anchovies and cook until the onions are soft and the anchovies are starting to melt.

Step 2Add the squid parts, the clam juice, and the water. Bring to a boil and then reduce the heat and cook for 10 minutes.

Step 3Add the lemon juice and garnish with parsley.
