Ingredients

  • 2 pounds squid, cleaned and cut the body into rings and leave the tentacles intact
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 cup chopped white onion
  • 4 ounces anchovies
  • 1 bottle clam juice
  • 1/2 cup water
  • 1 - juice of 1 lemon
  • - fresh parsley for garnish

How To Make anchovy squid soup

  • Step 1
    Add the oil to a pot. Add the onion, garlic, and anchovies and cook until the onions are soft and the anchovies are starting to melt.
  • Step 2
    Add the squid parts, the clam juice, and the water. Bring to a boil and then reduce the heat and cook for 10 minutes.
  • Step 3
    Add the lemon juice and garnish with parsley.
