    boneless skinless chickens thighs cut into chunks
  • ·
    salt and pepper
  • 1 Tbsp
    cajun seasoning
  • 1/4 c
    vegetable oil
  • 28 oz
    can crushed tomatoes
  • 1 large
    onion chopped
  • 4 clove
    garlic minced
  • 1 Tbsp
  • 2 tsp
    dry thyme
  • 1
    bay leaf
  • 2 c
    chicken stock
  • 1/2 c
    brown sugar
  • 1/4 c
    fresh parsley
  • 2 large
    carrots peeled and sliced

How to Make African Chicken Stew


  1. Season the chicken with salt, pepper and cajun seasoning. Add oil to a large pot. Add the chicken, onions, and garlic. Saute until chicken is browned and onions softened. Add the tomatoes, thyme, paprika, bay leaf, brown sugar and chicken stock. Bring to a boil. Reduce heat to a simmer and simmer for about 20 minutes. Add the carrots and simmer 10 more minutes. Stir in the parsley
  2. Serve over noodles, rice or cubed potatoes.
