Ingredients
- 1 pound shrimp peeled and deviened
- 1 salmon filet skinned and cut into chunks
- 1 teaspoon coriander seeds
- 1 inch piece of ginger sliced
- 4 cloves garlic sliced
- 4 cups fish stock
- 3 tablespoons fish sauce
- 2 red chilies seeded and sliced
- 4 scallions chopped
- 1/4 cup brown sugar
- 1/4 cup fresh cilantro chopped
- juice of 1 lemon
- 7 ounces rice noodles
How To Make thai style prawn and salmon noodle soup

Step 1Place the fish stock in a pot and add the ginger, garlic and coriander seeds. BRing to a bowl then simmer at med heat for 10 minutes. Let sit for another 10 minutes then strain through a fine mesh strainer discarding the solids.

Step 2Place the stock back on the stove and add the fish sauce, red chilies, brown sugar and scallions. Simmer 2 minutes.

Step 3Place the noodles in another pan of boiling water to cook.

Step 4Add the salmon to the pot and cook 2 minutes. Add the shrimp and cook 2 more minutes. Add the lemon juice

Step 5Place the noodles in bowls. With a slotted spoon, spoon the fish and shrimp on the noodles. ladle the broth in the bowl and top with cilantro
