Ingredients
- 2 lemongrass stalks, trimmed to the bottom 8 inches.
- 4 scallions, white and green parts separated.
- 2 dried Thai chilies
- 1 lemon zest slices only
- 1 lime zest slices only
- 2 inch piece of ginger, sliced
- 8 cups chicken stock
- 2 tablespoons sugar
- 4 ounces Japanese style wavy wheat noodles
- 8 ounces oyster mushrooms, chopped
- 3 tablespoons fish sauce
- 1 pound shrimp, peeled and deveined
- 12 ounces cherry, tomatoes halved
- 1/3 cup lime juice
- 1/2 cup cilantro, chopped
How To Make thai style hot and sour soup with shrimp & noodles

Step 1Place the lemongrass and the white parts of the scallions on a cutting board. Roughly chop them and throw them in a large pot. Add the zests, chilies, and the ginger.

Step 2Pour the stock into the pan and bring to a boil. Reduce to a simmer and simmer 20 minutes.

Step 3Strain the stock. Place the stock back into the pot and add the sugar, mushrooms, fish sauce, and green parts of the scallions in 1/2-inch cuts.

Step 4Cook the noodles according to package directions and drain. Place the noodles in 4 bowls.

Step 5Add the mushrooms and cherry tomatoes to the pot. Cook 5 minutes.

Step 6Add the shrimp and lime juice, take off the heat, and let sit until the shrimp are pink.

Step 7Ladle into the bowls with the noodles and top with cilantro.
