Ingredients For snow crab soup

  • 3 c
    seafood or chicken stock
  • 1 Tbsp
    lobster bouillon base
  • 3
    scallions, chopped
  • 1/2 lb
    snow crab leg meat
  • 1/2 c
    creme fraiche
  • 1/2
    lemon juice and zest
  • crunchy garlic oil for topping (optional)

How To Make snow crab soup

  • 1
    Add the stock to a stockpot. Bring to a simmer.

    Add the lobster base and let it melt.
  • 3
    Add the scallions and simmer 10 minutes. Add the crab meat and cook 2 minutes.

    Stir in the crème fraiche and lemon juice and zest. Cook 5 minutes.

    Ladle into bowls and garnish with the crunchy garlic oil.
