  • 6 Tbsp
    flour
  • 6
    garlic cloves, chopped
  • 1.375 c
    bell pepper, chopped
  • 3 lb
    shrimp, unpeeled
  • 1 small
    tomato sauce, can
  • 1/4
    parsley, chopped bunch
  • 1/2 tsp
    hot pepper sauce
  • 2 lb
    okra
  • pinch
    salt
  • pinch
    pepper
  • 1/2 c
    shortening
  • 1/2 c
    onion, diced
  • 1/2 c
    celery, chopped
  • 3 qt
    water
  • 1 lb
    crabmeat
  • 1/2 tsp
    thyme
  • 3
    bay leaves
  • 1 Tbsp
    worcestershire sauce

How to Make Schumann's Seafood Gumbo

Step-by-Step

  1. Boil shrimp in salted water for 5 minutes; save stock.
  2. Clean shrimp and set aside.
  3. Cut okra into thin rounds and brown in shortening; do not scorch.
  4. In another pan, make a roux with flour and shortening; add garlic and cook until golden brown.
  5. Add onion, bell pepper, celery and parsley; cook until transparent.
  6. Add tomato sauce, simmer 10 minutes.
  7. Stir in shrimp stock and blend well; add thyme and bay leaves, cook 1 hour.
  8. Last 20 minutes, add shrimp, crab, salt, pepper, hot pepper sauce, worcestershire sauce and okra.
  9. Cover pot and allow to simmer gently at least 1 hour.
