crabmeat

bay leaves
1 Tbsp
worcestershire sauce

How to Make Schumann's Seafood Gumbo

Step-by-Step

  • 1Boil shrimp in salted water for 5 minutes; save stock.
  • 2Clean shrimp and set aside.
  • 3Cut okra into thin rounds and brown in shortening; do not scorch.
  • 4In another pan, make a roux with flour and shortening; add garlic and cook until golden brown.
  • 5Add onion, bell pepper, celery and parsley; cook until transparent.
  • 6Add tomato sauce, simmer 10 minutes.
  • 7Stir in shrimp stock and blend well; add thyme and bay leaves, cook 1 hour.
  • 8Last 20 minutes, add shrimp, crab, salt, pepper, hot pepper sauce, worcestershire sauce and okra.
  • 9Cover pot and allow to simmer gently at least 1 hour.
