A friend gave us a 20 lb. salmon so I had to come up with ideas to use up the meat so I came up with this super easy curry and it really tasted great.

Ingredients For salmon curry

  • 1/2 lb
    salmon filet skinless cut into chunks
  • 1 c
    seafood or vegetable stock
  • 1 Tbsp
    red curry paste
  • 1 Tbsp
    curry powder
  • 1 can
    14.5 oz coconut milk
  • 1 c
    fresh spinach roughly chopped
  • 1 lg
    tomato diced
  • 3
    green onions sliced
  • salt and pepper to taste
  • fresh cilantro for garnish

How To Make salmon curry

  • 1
    Place stock, coconut milk, red curry paste, and curry powder into stock pot. Bring to a boil. Reduce to a simmer and simmer 10 minutes.

    Add spinach, green onion, and tomatoes. cook 1 minutes. Season with salt and pepper.

    Add the salmon and remove from heat. Salmon will cook fast.

    Ladle into bowls and garnish with cilantro.
