salmon curry
A friend gave us a 20 lb. salmon so I had to come up with ideas to use up the meat so I came up with this super easy curry and it really tasted great.

Ingredients
- 1/2 pound salmon filet skinless cut into chunks
- 1 cup seafood or vegetable stock
- 1 tablespoon red curry paste
- 1 tablespoon curry powder
- 1 can 14.5 oz coconut milk
- 1 cup fresh spinach roughly chopped
- 1 large tomato diced
- 3 - green onions sliced
- - salt and pepper to taste
- - fresh cilantro for garnish
How To Make salmon curry

Step 1Place stock, coconut milk, red curry paste, and curry powder into stock pot. Bring to a boil. Reduce to a simmer and simmer 10 minutes.

Step 2Add spinach, green onion, and tomatoes. cook 1 minutes. Season with salt and pepper.

Step 3Add the salmon and remove from heat. Salmon will cook fast.

Step 4Ladle into bowls and garnish with cilantro.
