1/2 lbsalmon filet skinless cut into chunks
1 cseafood or vegetable stock
1 Tbspred curry paste
1 Tbspcurry powder
1 can(s)14.5 oz coconut milk
1 cfresh spinach roughly chopped
1 largetomato diced
3green onions sliced
·salt and pepper to taste
·fresh cilantro for garnish
How to Make Salmon Curry
- Place stock, coconut milk, red curry paste, and curry powder into stock pot. Bring to a boil. Reduce to a simmer and simmer 10 minutes.
- Add spinach, green onion, and tomatoes. cook 1 minutes.
Season with salt and pepper.
- Add the salmon and remove from heat. Salmon will cook fast.
- Ladle into bowls and garnish with cilantro.
