salmon curry

A friend gave us a 20 lb. salmon so I had to come up with ideas to use up the meat so I came up with this super easy curry and it really tasted great.

Ingredients

  • 1/2 pound salmon filet skinless cut into chunks
  • 1 cup seafood or vegetable stock
  • 1 tablespoon red curry paste
  • 1 tablespoon curry powder
  • 1 can 14.5 oz coconut milk
  • 1 cup fresh spinach roughly chopped
  • 1 large tomato diced
  • 3 - green onions sliced
  • - salt and pepper to taste
  • - fresh cilantro for garnish

How To Make salmon curry

  • Step 1
    Place stock, coconut milk, red curry paste, and curry powder into stock pot. Bring to a boil. Reduce to a simmer and simmer 10 minutes.
  • Step 2
    Add spinach, green onion, and tomatoes. cook 1 minutes. Season with salt and pepper.
  • Step 3
    Add the salmon and remove from heat. Salmon will cook fast.
  • Step 4
    Ladle into bowls and garnish with cilantro.
