A friend gave us a 20 lb. salmon so I had to come up with ideas to use up the meat so I came up with this super easy curry and it really tasted great.

Ingredients

1/2 lb
salmon filet skinless cut into chunks
1 c
seafood or vegetable stock
1 Tbsp
red curry paste
1 Tbsp
curry powder
1 can(s)
14.5 oz coconut milk
1 c
fresh spinach roughly chopped
1 large
tomato diced
3
green onions sliced
salt and pepper to taste
fresh cilantro for garnish

How to Make Salmon Curry

Step-by-Step

  • 1Place stock, coconut milk, red curry paste, and curry powder into stock pot. Bring to a boil. Reduce to a simmer and simmer 10 minutes.
  • 2Add spinach, green onion, and tomatoes. cook 1 minutes.
    Season with salt and pepper.
  • 3Add the salmon and remove from heat. Salmon will cook fast.
  • 4Ladle into bowls and garnish with cilantro.
