new orleans shrimp & squash bisque

Ingredients

  • 2 - onions
  • 6 cups chicken stock
  • 2 - carrots, thinly sliced
  • 2 tablespoons dill
  • 1 teaspoon hot pepper sauce
  • pinch salt
  • pinch pepper
  • 2 tablespoons butter, unsalted
  • 4 - yellow squash
  • 2 - potatoes, diced
  • 2 teaspoons worcestershire sauce
  • 1/2 pound shrimp, cooked

How To Make new orleans shrimp & squash bisque

  • Step 1
    In a large sauce pan, saute onions in butter, add stock, squash, potatoes and carrots.
  • Step 2
    Cook until vegetables are tender; cool and puree in blender.
  • Step 3
    Return bisque to stove and add remaining ingredients; bring to boil for 2 minutes, then serve.
  • Step 4
    Add dollop of sour cream and a sprinkle of dill weed for garnish, if desired.
