Even though I live in Maine, I love chowders. I just tried this Rhode Island seafood chowder and I'm still smacking my lips from last night.

Ingredients
- 1 - onion, chopped
- 1 tablespoon butter
- 1 cup water, fish stock or 1 cup clam juice and 1 cup of water
- 2 cups diced potatoes
- 1 cup lobster meat or shelled shrimp
- 6 ounces bay scallops or cut-up sea scallops
- 1/2 pound haddock, cod or flounder fillets
- 2 cups light cream or half-and-half
- - salt and pepper to taste
- - chopped fresh parsley to garnish
- - sprinkling of paprika
How To Make narragansett bay seafood chowder

Step 1Saute onion until tender in butter. Add liquid and potatoes and simmer 10-12 minutes.

Step 2Cut rest of seafood into chunks (except bay scallops, if using) and add. Heat for 2 minutes and stir in cream, salt and pepper. Heat.

Step 3To serve, sprinkle with parsley and paprika.
