Another recipe I learned at a very young age!!

Ingredients

  • 1/2 cup olive oil, extra virgin
  • 2-3 cloves garlic, chopped
  • 1 1/2 cups onion, chopped
  • 1/4 cup parsley, chopped
  • 2 cups celery, chopped
  • 1 cup green pepper, chopped
  • 2 1/2 cans tomatoe sauce
  • 1 cup italian dry wine.
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon sweet basil leaves
  • 1-1/2 pound shrimp, cleaned, shelled & deveined
  • 1 1/2 pounds assorted fish fillets: seabass, cod, snapper
  • 1 1/2 pounds cooked, cracked crabs
  • 2 dz. - fresh clams

How To Make mama "g's' cioppino (fish stew)

  • Step 1
    In a Large dutch oven or large kettle, saute garlic, onions, parsley, celery, green peppers in hot olive oil, being careful not to burn. Add tomatoes sauce, wine & seasonings. Simmer 1 hour. PREPARE SEAFOOD: While sauce is cooking, cut fish into pieces, clean & crack crab and scrub the clams. After sauce is cooked, add seafood (except the clams!!!) to the kettle. Cook over low heat until fish is done (no more than 25 minutes) Add clams. As soon as clams open, serve.
