Always loved the Ceviche at El Tapatio's in Rainier, Oregon. This is very close.

Ingredients

v-8 or tomato juice
diced celery
diced onion
avacado
diced cucumber
diced tomato
dash
lime juice
optional diced pepper (jalapeno or serranto)
shrimp, crab, scallops, or whitefish of your choice

How to Make Ceviche

Step-by-Step

  • 1Use in any quantities you like, no measuring neccesary.
  • 2Ceviche


    To V-8 or tomato juice

    add shrimp (or fish of your choice-scallops, crab, whitefish, etc.)

    Chop and add:

    celery
    onion
    jalapeno or serrano pepper (optional)
    avacado
    cucumber
    tomato
    tbsp. lime juice

    add to taste: red pepper, cilantro, tobasco, hot sauce, celery salt

    Let set in fridge for a couple of hours to meld flavors. Fun to serve in coctail glasses as appetizer or soup course!
