You can really use any type of fish you would like and if you wish to have a bit more "fish" flavor you can add a bit of fish sauce to taste. This specific recipe does not reheat well so plan on finishing your batch in one setting. Enjoy!!!

Ingredients
- 1 large onion (chopped)
- 1/2 cup celery (chopped)
- 1 large garlic clove (crushed)
- 2 tablespoons butter
- 2 cans stewed tomatoes (16 oz cans)
- 1/2 cup dry white wine
- 1/2 cup parsley (minced)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon tyme
- 1 pound cod filets
How To Make basque fish soup

Step 1In a large sauce pan, saute the onion and celery in butter until soft.

Step 2Stir in the tomatoes, wine and spices.

Step 3Cover and simmer for 30 min to blend the flavors.

Step 4While the mixture is simmering, cut the fish into 1" chunks.

Step 5Once the mixture has simmered for 30 min you can add the fish chunks to the mixture and simmer for an additional 10 min or until the fish is white and opaque.
