My mom's friend passed this recipe along to her. I have sent this to cancer patients that have lost their taste for other foods and they really enjoyed it. It is also great to send to a bereaved family who is overwhelmed with fried chicken and green beans. I double the recipe when taking it to gatherings.

3 medium
potatoes, diced
1 medium
onion, diced
1 can(s)
cream of chicken soup
4 oz
cream cheese
water for desired thinning of mixture
salt and pepper to taste

How to Make Yummy Potato Soup


  • 1Slightly cover diced potatoes and onions with water in a 2qt pot - lightly salt and boil until the water is mainly cooked out and the potatoes and onions are soft
  • 2Add cream cheese and cream of chicken soup - add enough water to thin the mixture to desired consistency (may have to add more as the soup simmers)
  • 3Simmer on low until all is mixed and thickened (about 15-20 min) and stirring often
