While visiting my aunt in Rogersville, MO last weekend, one of her wonderful neighbors gave me this delicious potato soup recipe. Very easy!

Ingredients
- 5 pounds yukon gold potatoes, peeled and chopped
- - chicken broth to cover the potatoes
- - salt and pepper to taste
- 8 ounces cream cheese, cut up
- - dried dill to taste
- 1 pint heavy cream

Step 1Peel and chop the potatoes into small pieces; cook in chicken broth (enough to cover the potatoes) until soft. Add salt and pepper to taste. Add the cream cheese and stir until melted; add dill to your taste and a pint of heavy cream.

Step 2Stir all until the cheese is melted and continue stirring until the soup is hot and ready to eat. ENJOY!
