While visiting my aunt in Rogersville, MO last weekend, one of her wonderful neighbors gave me this delicious potato soup recipe. Very easy!

Ingredients

  • 5 pounds yukon gold potatoes, peeled and chopped
  • - chicken broth to cover the potatoes
  • - salt and pepper to taste
  • 8 ounces cream cheese, cut up
  • - dried dill to taste
  • 1 pint heavy cream

How To Make yukon gold potato soup - steph

  • Step 1
    Peel and chop the potatoes into small pieces; cook in chicken broth (enough to cover the potatoes) until soft. Add salt and pepper to taste. Add the cream cheese and stir until melted; add dill to your taste and a pint of heavy cream.
  • Step 2
    Stir all until the cheese is melted and continue stirring until the soup is hot and ready to eat. ENJOY!
