wintery comfort soup, cream of spinach
I really was taken back that not alot of store offer a cream of Spinach soup option, so I sat down and started playing with different options took me about 8 different tries to get it to my perfect. My kids and husband love it and I have to make this 5 or 6 times throughout the fall winter months. I have tweaked the nutmeg content just because it give it a little fall feel to it but you can add as much as you like. I hope you all enjoy this I will be posting more cream soups soon.

Ingredients
- 2 pounds spinach, fresh
- 2 1/2 cups heavy cream
- 2 teaspoons flour
- 4 tablespoons butter (i use salted)
- 2 tablespoons nutmeg
- To taste teaspoon salt and pepper
- 2 tablespoons garlic (i use the already chopped in contaniner)
- 1 large white onions(finelychopped)
- 2 large chicken stock, light containers
- 2 packages carrot, shredded

Step 1Add butter garlic and onion cook till onion is soft use low heat so that butter doesnt burn. Add in flour make a rue keep stirring until a creamy consistency

Step 2Add spinach and shredded carrots cook all together about 8 mins until spinach is starting to wilt

Step 3Add heavy cream chicken stock and spices to the spinach cook on med low heat

Step 4If u like a thicker soup add some flour to a cup and mix it with some chicken stock then add to soup.

Step 5Serve with a warm roll or baguette
