unbelievable homemade potato soup

This will be the only potato soup you will ever make. It is so hearty and delicious. It takes a little time chopping all the veggies, but, soooooo worth it. My family devours it every time I make it. I usually make homemade rolls to go with it.

Ingredients

  • 6 cups peeled and diced russet potatoes
  • 1 medium onion, chopped
  • 3 medium carrots, chopped
  • 2 stalks celery, diced
  • 2 cups chicken broth
  • 1/3 cup butter
  • 1/3 cup flour
  • 2 1/2 cups 2% milk
  • 2 cups heavy cream
  • salt & pepper to taste
  • real bacon bits and shredded cheddar for garnish

How To Make unbelievable homemade potato soup

  • Step 1
    In a large stockpot, combine chicken broth, and all vegetables, season with salt and pepper to taste.
  • Step 2
    Bring to a boil, cover and cook on medium high for 15-20 minutes, till veggies are soft.
  • Step 3
    Meanwhile, while the veggies are cooking In a medium saucepot, melt butter over medium heat, add flour, whisking constantly, cook for about 30 seconds, slowly stir in milk, and cook till bubbly and thickened.
  • Step 4
    Once veggies are done, add milk mixture and stir. Add Heavy cream and combine as well.
  • Step 5
    Get your bowls and fill em' up
