the best squash casserole

After my squash is cooked & drained I run it thru my food processor because i don't like large, stringy pieces of squash. Don't get me wrong, I love squash, but slurping a stringy piece of squash isn't ladylike. :)

Ingredients

  • 2 cups squash, cooked, drained & mashed;
  • 2 cups cracker crumbs, or bread crumbs
  • 2 cups x-sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 1 can cream of mushroom soup, undiluted; or any cream soup of your choice
  • 1/4 cup margarine or butter

How To Make the best squash casserole

  • Step 1
    Mix all ingredients. Pour into buttered casserole.
  • Step 2
    Bake at 350 degrees for 30 minutes or until golden brown & bubbly
