Ingredients

  • 1/2 pound bacon
  • 1 large onion
  • 4 medium russet potatoes
  • 1 package coleslaw mix
  • - chicken broth
  • 16 ounces sour cream
  • 2 sticks butter

How To Make the best potato soup

  • Step 1
    brown crumbled bacon, remove from drippings, leave the drippings in pan you will be using
  • Step 2
    peel and dice potatoes, and onion, saute in bacon drippings, add cole slaw mix and just barely cover with chicken broth, bring to boil and cook until the potatoes are tender
  • Step 3
    turn the heat off.....put the butter in and allow to melt, stir in, then blend in the sour cream. If you re-heat be careful the sour will break if you get it too hot. Serve with toppings such as chopped green onions, the bacon and cheese, whatever you choose. This if very filling and a good meal.
