sweet potato soup

This is the kind of soup that you can't stop eating once you start. It's full of goodness and at the top of the line of comfort food. It's filling and that's the trouble. I want to eat more but don't have the room! Hope you enjoy this as much as we do.

Ingredients

  • 8 medium fresh sweet potatoes, peeled,quartered
  • 2 quarts chicken stock
  • 2 cups chopped onion
  • - salt and pepper to taste
  • 16 ounces sour cream
  • 1 cup instant potato flakes
  • 1/2 stick butter
  • 1/2 teaspoon red pepper flakes
  • 1 jar real bacon bits

How To Make sweet potato soup

  • Step 1
    In large stockpot, add broth, sweet potatoes, and onions together. Bring to a boil for about 30 minutes until sweet potatoes are tender. When they are tender, take a hand mixer and carefully mash the sweet potatoes right in the broth. When creamy, add butter and stir until blended. Add red pepper flakes. Stir. Add sour cream and stir. Add instant potatoes and whisk until blended. Add bacon bits. Salt and pepper to taste. Let soup sit a spell for all the flavors to blend together...about 15 minutes before serving.
